Pepperoni Roll-ups

Dear readers, I am always faced with a dilemma called, "What the hell am I going to do for dinner?" I get off of work at 4 pm, get Audrey from daycare, and prefer to have food in her mouth by 5 pm. This leaves me with about 30 minutes to cook something healthy and nourishing for her (which she will actually eat). Pepperoni Roll-ups were a concoction that actually solved this problem quite well. Here is the quick and easy recipe:…

9 Quotes to Weather the Storm

Dear readers, Everyone has hard days, weeks, months, or maybe even a hard year. As human beings we doubt our decisions, beat ourselves up for the choices we made, and generally over-think what we may have under-thought before. When you enter into that rut, have your heart ripped to shreds, or have your will tested, sometimes we need some words of wisdom to yank us off our knees and back on to our feet. Here are nine quotes to help…

No-Knead Wheat Bread

Dear readers, There is nothing like home-made bread. I've managed to mash this recipe together after a few years, various recipes, and lots of trial and error. Too much wheat equals a brick. No wheat and well, it just isn't wheat bread. Lately, I've been using King Arthur Flour: White Whole Wheat. It's mild, unbleached, and zero preservatives. I make this bread once a week in the fall/winter because it requires very little effort on my part aaaaaaaaaand we all…

Oswald’s Bear Ranch

Dear readers, My daughter, mother, and I went to Oswald's Bear Ranch for the very first time on 4th of July weekend. We were really impressed. Oswald's Bear Ranch is the largest bear-only complex in the United States of America. It is the home of twenty-nine rescued bears, with two huge (and beautiful) habitats for their older bears. They also have two smaller habitats for their younger bears. I found it to be very family friendly, inexpensive, and great exercise…

Memorial Day 2016

Dear readers, Today I will talk  about what Memorial Day 2016 means to me. I'd first like to start this post with a huge thank you to the brave men and women who served our country. The people who set aside years of their lives for a greater cause, knowingly putting themselves in danger to protect America and all it's ideals of freedom and greatness. As always, we dedicate this Memorial Day to you. Secondly, I'd like to say a formal good-bye…

Ms. Moxie Goes Back to School…

And I thought I loved coffee before... Dear readers, I have decided to go back to school. It was pretty much a no-brainer. The hospital where I work offered to pay for two of it's departments to take a coding class. It's one three hour class, every Wednesday, for the next year. Plus tons of self training and reading. You think one class isn't that big of a deal, think again. Medical coding is hard. And also pretty amazing. Do…

15 Goals of Summer 2015: The Recap

Dear readers, I want you to know that you are officially a part of history, as this is the very first "recap blog" I have ever written. On June 8th,  I posted 15 Goals of Summer 2015, today my post will be a review of how well I managed to reach those goals. Since I haven't actually monitored my success throughout the summer, I am very interested in doing this recap. Here goes nothing Moxie people! 1. Go kayaking on various…

Camping with my Best Friend

Dear readers, I have the best friend in the whole world. We met when we were seven. We were in the same class together. We walked home from school one day and we realized that her family had moved in to my family's old house. I'd like to think we knew it was meant to be. We did ridiculous things together as kids. I think my child is weird, but when I look back on the things my best friend and I…

The Sturgeon River

Dear readers, I've formed a deep connection with nature these past few months.  I've always liked to be outside, but I never considered it a place of healing until this summer. Sometime around March, I began to formulate my summer plan. It looked a little bit like this, "Go outside as much as possible." I've really outdone myself. As mentioned before, I live in Sault Ste. Marie, Michigan. It is small town in the middle of nowhere with nothing…

The Soo Locks With Sam

Dear readers, A few weeks ago, I had the pleasure of taking my friend Samantha out on a date. The hospital offered it's employees a free dinner cruise with the Soo Locks Boat Tour, and I knew just who needed a night out. She's crazy, I'm crazy, it just works. If you are ever in Sault Ste. Marie,  I highly suggest you take the Soo Locks Boat Tour. Here are the beautiful photos from our night on the St. Mary's River.…
